Chocolate Turtle Cheesecake
A. Ingredients Needed
vanilla wafer (crumbs)- 2 cups
1 pack (about 14 ounces) caramel
1 can (5 ounces) evaporated milk
2 tablespoons unsalted butter, melted
1 cup chopped pecans
2 packages (8 ounce) cream cheese, softened
1 tsp vanilla extract
Half a cup of sugar (white)
½ cup choco chips (semi sweet)
B. How to Bake
1. Preheat oven to 350 degrees F (175 degrees C). Mix the cookie crumbs and melted butter in a large bowl. Prepare a 9-inch diameter springform pan. Press this mixture onto its bottom.
2. Put a saucepan over low heat. Melt the caramels in it. Mix it with evaporated milk. Stir the mixture frequently until smooth. Afterwards, pour the caramel sauce onto the crust in the pan and put the pecans on top.
3. Get another large bowl and mix cream cheese, vanilla, and sugar. Beat them well until smooth. Beat the eggs into the mixture one by one. After each addition, mix well. Melt the chocolate and add it into the cream cheese mixture. Then, put the chocolate batter into the pecans.
4. Bake the batter for 40 to 50 minutes or until filling is set. Let it cool and refrigerate afterwards for 3-4 hours before serving.
