Beef Enchiladas

Just thinking about Beef Enchiladas makes me hungry! I love them. This is an easy recipe to prepare and it's a crowd pleaser.

Here are the ingredients you will need:
    1 lb. sirloin steak (cut it into bite size pieces or into strips)
    Onion (1 cup, chopped)
    2 cans diced green chili peppers (7 ounces per can)
    Tomato sauce (4 cups, divided)
    Chili powder (2 teaspoons)
    Black olives (3/4 cup chopped and drained)
    Cheddar cheese (2 cups, shredded)
    Sour cream (1/2 cup)
    Green onion (1/3 cup, chopped)
    Fresh salsa (1/ cup)
    1 package corn tortillas (12 ounce per package)

Now follow these step by step directions:

Pre-heat the oven 350 degrees °F. While the oven is pre-heating, take a large casserole dish and lightly grease it.

Saute onions until translucent in a skillet over medium heat. Then place the beef, the chile peppers and the garlic, until the meat is brown. Place tomato sauce and chili powder, mix well and continue heating.

Remove it from heat and put a little of the meat into a tortilla (you can use hard or soft). Put a little bit of salsa, cheddar cheese and olives on top. Fold the tortilla up and put it in the casserole Repeat until the meat mix is gone.

Save the ½ cup of cheddar to put on top. Pour the rest of the tomato sauce and sour cream over the tortillas and top it with green onions. Now add the cheddar cheese that was set aside.

Bake the tortillas in the preheated oven for about 30 minutes.

This can be prepared for about an hour and your meal is ready. This recipe will feed about 6 people.
