Bacon and Chicken Fajitas

This Chicken Fajita recipe is my family's favorite Mexican recipe. You will need the following ingredients:

  • 3 chicken breast halves (skinless and boneless)

  • 3 slices of bacon (peppered and diced)

  • onion (1/ 2 cup, chopped)

  • bell pepper (1 red, 1 green, chopped)

  • mushrooms (1 ½ cups, chopped)

  • cherry tomatoes (1 cup, cut in halves)

  • cilantro (3/4 cup, chopped)

  • 8 large flour tortillas (warm it to soften)

  • salt to taste

Here are the steps on how to make your delicious and colorful bacon and chicken fajitas.

1. Cook the chicken breast in a large skillet over medium heat. Wait until it is golden brown without juices. Put salt to the chicken breasts just enough to taste and slice it to bite sizes and set it aside.

2. Place the bacon in a hot skillet until oil is released. Place the onion and the bell pepper and cook until the onions become translucent and the bacon is crispy. Then place the tomatoes and the mushrooms and continue cooking until mushrooms are soft and add the chicken and the cilantro.

3. Spoon the cooked ingredients to the warmed tortillas and serve.

This recipe will make enough for a family of four.
